Aroma: Light orange/straw color that glows very nicely. White, clumpy head that built up fast and is dropping fast in large chunks. Lacing is sticking well to the sides of the glass.
Smell: A bit of funk with a big hit of spices and a very strong yeast presence. The sage comes through very much, almost reminds me of the DFH/Victory/Stone collab with all the herbs. Very grassy and earthy. Could use a bit more citrus.
Taste: Citrusy and clean on the palate with the sage leaving a nice undertone throughout. Some orange and grapefruit with some wheat and hay.
Mouthfeel: Crisp and well carbonated, light in body and has a very nice aftertaste. A really interesting and surprising saison.
Overall: Very impressed with this one. Certainly would pair well with food and certainly is creative and inspiring. Another winner from Stillwater.
